For mothers day I made my mom Tiramisu pancakes! I kid you not, these taste exactly like Tiramisu. You could use this for a dessert and no one would be able to tell the difference! This, while fattening, is soooooooo good. You will love it! I got it from Just a Pinch.
Ingredients:
Pancakes (I used 12, but the recipe calls for 3)
1 c heavy cream
3/4 c sugar, divided
1 pkg cream cheese (normally 8 oz) room temperature
1 tsp vanilla extract
1 c espresso brewed
cocoa powder (for sprinkling on top)

1. In a large bowl, combine the cream cheese, heavy cream, vanilla and sugar. Whip with a hand mixer until light and fluffy.
2. Lay 1 pancake down on a plate or in a pan and pour Espresso over the top until the pancake is moist. Spread some of the cream cheese mixture over the top of the pancake. Lay the 2nd pancake on top and repeat. Repeat on the last pancake.
3. Put the cocoa powder into a small sieve and tap it gently over the pancake to dust the tops. Refrigerate for an hour (the recipe says that, i did about 25 minutes and it tasted fine). Eat up!

You could probably make larger pancakes, and make this as a cake. The recipe is delicious, though I warn you it is both delicious and filling. My mom, brother, and I ate half of this for breakfast and wanted to EXPLODE!!! Hope you like!
